The most common is the use of <strong>cereals such as wheat, barley or corn<\/strong>, which provide a dry, clean profile; however, in regions with great winemaking tradition like ours, it is very common to use <strong>wine-based alcohol<\/strong>, that is, <strong>coming from the grape<\/strong>, which gives the gin a silkier texture in the mouth.<\/p>\n\n\n\n<p>This alcohol is rectified until it has practically no flavour, acting as a &#8220;blank canvas&#8221; so that, in a second distillation, juniper berries and botanicals enhance it with their definitive aroma and flavour.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">The botanicals<\/h3>\n\n\n\n<p>Botanicals are the plants, spices, roots and citrus fruits that build the <strong>personality<\/strong> of each gin. <strong>Juniper<\/strong> is the essential base of gin. Without juniper there is no gin.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full is-resized\"><img loading=\"lazy\" decoding=\"async\" width=\"500\" height=\"335\" src=\"https:\/\/vinicagin.com\/wp-content\/uploads\/2026\/03\/image-6.webp\" alt=\"premium gin\" class=\"wp-image-2744\" style=\"width:586px;height:auto\"\/><\/figure>\n\n\n\n<p>There are two main ways of extracting aroma:<\/p>\n\n\n\n<p><strong>Maceration<\/strong><br>The botanicals are submerged in the alcohol; the extraction is deep and intense. It requires fine control to avoid bitter or vegetal notes.<\/p>\n\n\n\n<p><strong>Vapour infusion<\/strong><br>The alcoholic vapour passes through the botanicals and drags lighter aromas. The profile is usually more ethereal.<\/p>\n\n\n\n<p>A <strong>premium gin<\/strong> can use one method or the other. As in everything, the decisive part lies in the details:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Maceration times adjusted to each botanical<\/li>\n\n\n\n<li>Temperature control<\/li>\n\n\n\n<li>Calibrated proportions<\/li>\n\n\n\n<li>Real selection of ingredients, not a generic mix.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">The cut<\/h3>\n\n\n\n<p>In the <strong>distillation process<\/strong>, the liquid is heated so that the alcohol evaporates and then condenses. And this is where the <strong>cut<\/strong> comes into play, which is precisely the transition point where the <strong>distiller<\/strong> decides to separate <strong>which part of the liquid is kept for the gin<\/strong> and <strong>which part is discarded<\/strong> or reprocessed.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Heads:<\/strong> these are the first vapours to condense. They contain highly volatile alcohols and acetates. They are the compounds that provide a <strong>pungent smell<\/strong> and an <strong>excessively strong or metallic flavour<\/strong>. They are discarded for safety and flavour.<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Heart:<\/strong> this is the intermediate phase of the cutting process. It is the <strong>highest-quality alcohol<\/strong> where the <strong>clean aromas and smoothness<\/strong> are concentrated. This is the <strong>only component used for premium gin.<\/strong><\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Tails:<\/strong> when the alcohol level drops and the temperature rises, <strong>fusel oils and heavy compounds<\/strong> begin to appear. These provide bitter, earthy flavours and an oily texture that ruins the sensory profile.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Origin of the flavouring<\/h3>\n\n\n\n<figure class=\"wp-block-image size-full is-resized\"><img loading=\"lazy\" decoding=\"async\" width=\"900\" height=\"500\" src=\"https:\/\/vinicagin.com\/wp-content\/uploads\/2026\/03\/image-9.webp\" alt=\"premium gin\" class=\"wp-image-2752\" style=\"width:656px;height:auto\" srcset=\"https:\/\/vinicagin.com\/wp-content\/uploads\/2026\/03\/image-9.webp 900w, https:\/\/vinicagin.com\/wp-content\/uploads\/2026\/03\/image-9-768x427.webp 768w, https:\/\/vinicagin.com\/wp-content\/uploads\/2026\/03\/image-9-600x333.webp 600w\" sizes=\"auto, (max-width: 900px) 100vw, 900px\" \/><\/figure>\n\n\n\n<p>The regulations distinguish 3 main categories: gin, distilled gin and London gin.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Gin<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Essences or extracts are added.<\/li>\n\n\n\n<li>No redistillation required.<\/li>\n\n\n\n<li>Legal method, but technically basic.<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Distilled gin<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Requires redistilling the alcohol with natural botanicals.<\/li>\n\n\n\n<li>Greater aromatic integration.<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">London gin<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Mandatory redistillation with all the botanicals.<\/li>\n\n\n\n<li>Colourings prohibited.<\/li>\n\n\n\n<li>Maximum limit of <strong>0.1 g\/L of sugar<\/strong> if the term &#8220;<strong>dry<\/strong>&#8221; is used, which indicates a distillate without added sugars after distillation.<\/li>\n<\/ul>\n\n\n\n<p>The <strong>premium<\/strong> difference:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Adding aromas is not enough.<\/li>\n\n\n\n<li>Real redistillation is required.<\/li>\n\n\n\n<li>Added sugar is controlled.<\/li>\n\n\n\n<li>Natural balance is sought, not later correction.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">The finishing<\/h3>\n\n\n\n<p>After distillation comes the final adjustment: dilution with quality water, possible filtering and, in some cases, a brief rest before bottling.<\/p>\n\n\n\n<p>In less careful gins, this phase serves to correct what went wrong:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Sugar to round off<\/li>\n\n\n\n<li>Additives to soften<\/li>\n\n\n\n<li>Adjustments to disguise imbalances<\/li>\n<\/ul>\n\n\n\n<p>In a well-made gin, this stage is highly technical. It also depends on the equipment that makes a clean and stable base possible.
